As we can’t entertain you with our juggling, stilt walk, hula hoop and other circus skills at this moment, we have decided you share a bit of joy with some of our performer’s own recipes.
We start off with Rudi’s savoury pancakes (veggie or non-veggie option):
- 3 Eggs
- Red Pepper
- Spring Onoin
- Mushrooms (I use Button Mushroom, but any will do, chanterelles are really nice)
- Wild Rocket
- and for a version with meat – some chorizo – really good flavour for this – but again any salami or bacon will do)
Break the eggs in a big enough bowl and whisk them with a pinch of sugar and a pinch of salt and a bit of fresh ground pepper.
Add milk, roughly 3 times the amount of milk to the mass of the eggs (eggs can take up to 5 times their volume, but we don’t want it to be to blend). Whisk again. Start adding flour gradually (don’t stop whisking) until a thick, even consistency that still runs easy from the whisk (depending how thin or thick you like your pancakes use more or less flour).
Cut onions, red pepper and mushrooms (and chorizo if wanted) and grate the cheese.
Heat frying pan, add a bit of oil and fry first the onions a bit, then add the peppers (and the chorizo), the mushrooms last. With a ladle poor pancake mix evenly over and around the stuff in the pan that the dough surrounds all the bits but not cover them fully. Sprinkle a bit of the grates cheese on the top. Wait until the mix start to solidify, then flip the pancake, sprinkle the rest of the cheese over it and fry until done.
Out of the pan – wild rocket on top – ready – enjoy 🙂
